Let me introduce the roll cake to you: Bolo de Rolo (Roll Cake) is a typical dessert from Pernambuco state, located in northeast Brazil. It originated as the adaptation of the Portuguese cake Colchão de Noiva (Bride's Mattress), a rolled sponge cake filled with almonds. Upon arriving in Brazil, the Portuguese bakers changed the filling to the native guava fruit.
By the Ordinary Law № 379/2007: bolo de rolo was recognized as intangible heritage of Pernambuco.
